Just use some fishing line or super glue gel. Tie or glue the rhizome to the driftwood, and it'll attach itself over time. Don't bury the rhizome in the substrate, though, or it'll rot. I've done this with all my Anubias, and they're doing great.

Java Moss is solid, but you gotta try some Anubias or Bucephalandra too. They're chill and don't need much light. Shrimp love hiding in the leaves. I've got a 20 gallon with both, and my shrimp are always grazing on them. Also, floating plants like Frogbit help keep the water clean.

Temp matters big time. Discus like it hot, but bacteria thrive in warmth. If you're at 86°F, maybe drop to 84°F and see if the smell chills out. Also, double-dose Prime during water changes—it neutralizes some of the nasty stuff.

I had a similar experience with my Acans - minimal growth in the first 3 months. Switched to the coke bottle method, which made all the difference.
