Good news that she's alone in a nice big tank - that's a great start. You might want to try feeding her some frozen brine shrimp, see if that tempts her to eat. And don't forget about those water changes - bigger and more often can make a big difference. Also, think about the lighting in your tank ...

Bettas are best on their own, to be honest. That ammonia issue, though - it's a big problem that needs sorting ASAP. Your tank isn't cycled, and that's why you're still getting ammonia readings. I'd recommend doing 70% water changes daily until it's all clear - no ammonia, no nitrite. It's a pain ...
