Vesicularia ferriei 'Weeping Moss' is supposed to be a breeze to grow, I've heard. So, fingers crossed, I've just added it to my tank.

I'd also recommend adding some Asian water fern, Christmas moss, and subwassertang to your list. These plants are pretty low maintenance and can add some nice texture to your tank. Asian water fern can be tied to driftwood or rocks, and Christmas moss can be attached to pretty much anything. Subwassertang is a great option for a carpeting plant, and it's relatively easy to care for.
