keeping south and central american cichlids together: setup examples

As mentioned earlier, plus a few more questions. I'm closing down my 6x2x2 and switching to centflake American cichlids. What kind of stocking levels can I realistically achieve? Should I stick to all males, all females, or a mix of both? What are the main things I should steer clear of? Any other advice from you experts would be greatly appreciated. Cheers
