Is betta glass surfing a sign of fast swimming?

I'm having a bit of a concern and I thought I'd run it by you all. My betta sometimes zooms up and down the sides of her tank at high speed - it's not constant, but it's happened enough to catch my attention. I'm worried she might be bored, despite the tank being pretty decked out with live plants, rocks, and driftwood. I change up a tunnel or two every week, so I'm not sure what's missing.

As for her diet, I feed her three times a day - usually 4-6 frozen brine shrimp or fluval bug bite pellets. I also do a two-day fast on the weekends. I know it sounds like a lot, but she hasn't gained any weight and is always swimming. To be honest, I've never even seen her sleep or rest in the two months I've had her. I'm probably being paranoid because of my last fish, who died from ammonia poisoning and started swimming rapidly before having seizures - it was awful, and I had no idea what I was doing at the time.

But I just wanted to check in and see if anyone has any thoughts on this behavior. I've linked a video of her swimming below.

Decorations: Live plants, fluxeon rock and driftwood, floating tunnel, almond leaves
Water changes: 30% once a week + substrate vacuum
Tank occupants: female koi betta + some ramshorn and bladder snails
