Your water params look good, but how's the noise level? Loud sounds or vibrations can stress 'em out. Keep the tank in a quiet spot if possible.

One more thing, soup. Make sure your surface agitation is good. I run a small powerhead pointed at the surface to keep oxygen levels up. Co2 can lower oxygen, especially at night when plants aren't photosynthesizing. My discus are active and eating well, so it's working for me.

Co2 can be safe if you're careful. I've run it in my 120 gallon discus tank for years. Key is to keep the co2 levels stable, around 20-30 ppm. Use a drop checker to monitor. Good point. And if you're using flakes, switch to pellets. Flakes dissolve too fast and can foul the water.

Bettas can be picky eaters. Try frozen bloodworms or brine shrimp. Also, make sure the pellets are small enough for his mouth. What brand are you using?

I genuinely like the look of this tank, and I'd be hesitant to remove the foreground plant just yet. The subtle colour accents it provides are a nice touch. I agree with Blossp's point. Sexing discus can be quite tricky and almost impossible without a clear sign like eggs. Anything else is just a guess.
