There's a Jewel Cichlid, Kribensis, Peacock Cichlid, Convict Cichlid, Common Pleco and a Rainbow Shark in the 75 gallon. I'm hoping they'll all get along, but we'll see. You're on the right track with the fin thing. Typically, males have that extended fin with spots, and the females have shorter fins with no spots. If you pay close attention, you'll notice the ones with the most spots on that fin tend to be the alphas in the tank.

Determining the sex of African cichlids can be done by looking at their anal fin. Typically, males have spots or dots on their anal fin, while females have a shorter anal fin without these spots.

I'd say sand can work, but it really depends on the type of fish you're planning to keep - some of them just love digging and can cause a mess. For example, if you're going to have some active swimmers or burrowers, you might want to consider a different substrate.
