I'm kinda new to this, but I've heard that adding more plants can help with water quality. Is that true? Also, what's the deal with CO2? Is it really necessary?

First thing I'd recommend is upgrading your lighting if you haven't already. A good LED setup can make a huge difference for plant growth. Also, consider adding some driftwood or rocks for hardscape. It'll give your tank more dimension and provide hiding spots for your fish.

Based on the images provided, particularly pic #2 and #3, I'm inclined to believe your Mbuna is a male Cynotilapia afra, also known as a Dogtooth Cichlid.
