Had a similar issue. Turned out my tap water had high sulfur. Test your source water just in case. If it's fine, then yeah, focus on substrate and filter. Oh, and how old is your driftwood? Sometimes that leaches tannins and other stuff that can smell weird.

Could be a mix of territory and stress. What's your water change routine? Sudden temp or pH swings might trigger it. I do 30% twice a week with aged water, and mine barely flare unless they're spawning.

For a 75-gallon, consider a mix. I use Amazon Swords for height, Anubias for mid-ground, and Java Moss for texture. My Discus seem happier with the variety. Tank's been stable for 8 months now, no algae issues.
