I noticed a similar change when I switched from a black background to a middle blue one with a textured, light-colored "sand" effect on the bottom. I can easily switch between the two, but I'm still undecided on which one I prefer. The peppering on some of my discus has mostly disappeared, though it wasn't too bad even with the black background and bare bottom.

Three days is a pretty short time for them to adjust. I'd give it a bit more time. You could try bumping up the heat to around 88-90 degrees and adding 2 tablespoons of salt per 10 gallons. This might help stimulate their appetite and metabolism.

Thanks Jumper, I've added the salt and already see a difference in colour. I'll turn up the heat a bit more, as you suggested. They're not eating yet, but seem a bit interested in the food now.
