Yeah, if you're married to the 75, maybe drop to 6 Discus. They'll thank you for it. Less stress, better colors. Plus, your filter won't have to work overtime.

Another thing: how's your substrate? Bare bottom or sand? Bare bottom tanks can handle slightly higher stock since waste doesn't get trapped. Just a thought.

LFS advice is hit or miss, but 10 gallons per fish is a solid rule. Your tank's at 9.375 gallons per Discus, which is cutting it close.
