I've bred Discus in everything from 30 to 60 gallons. The bigger tanks definitely give better results, but it's more about water quality. Keep TDS under 100, temp steady, and you'll see success.

My pair keeps eating the eggs. Is that a tank size thing or just bad luck?

Thanks for the advice, everyone. I'll go with a 55-gallon and step up the water changes. Appreciate the tips on filtration and feeding too.
