My mom just came in and she's feeding him a little bit, she thinks he looks the most vibrant and healthy he's ever been, so I'm gonna take that as a good sign.

I think it's pretty common for bettas to change colors, especially when they're in a new environment. Like, I've seen it happen when they're moved from those tiny cups to a bigger tank.
