I've also given veggies a shot with my fish. They go crazy for peas, and I recall my oldest fish, a silver hatchet, he lived a whopping 17 years and was absolutely fond of his spinach.

I'm inclined to agree, we can't see the before picture, but his fins seem fine to me. A quick online search for male Betta images will show you plenty with similar finnage. I've had some success with a simple DIY CO2 setup - it's been about 5 years now, and I've found that plants like Vallis, Hygrophila, and Ludwigia grow pretty well for me. They do grow quickly, though, so I do have to prune or thin them out once or twice a week.

I've noticed Vallis does better on its own, without other plants competing for resources. When I've tried adding other species, Vallis growth slows and it usually ends up struggling.
