Your tank looks amazing. One thing that caught my eye is the CO2 ladder - I'd consider placing it at the bottom of the tank. This way, more of the CO2 can be absorbed into the water, which might enhance the overall health of your plants.

Another possible reason for them to jump is skin irritation - if they're feeling uncomfortable or itchy, they might try to escape it by leaping out. I think it's worth testing the tank's parameters and checking for any signs of skin flukes or other ectoparasites that could be causing them distress.

Could be Rhodophyta, that's not good news, it's essentially red algae.
