It depends on your setup, really. If your 55g is super heavily planted like you mentioned, I'd say up to 30 females could work.

I'm curious, are there any other fish besides cories that can coexist with a betta in a medium-planted 10g tank? I've read mixed reviews about housing multiple fish with bettas in smaller tanks, so I'm being cautious. What's your experience with this?

I think the full yellow female would be a good choice, it'll likely breed more true to color than the other options. If you do end up using your friend's full yellow male, just be careful, I've seen them beat each other up pretty badly during breeding.
