From my understanding, there's a mathematical chart that outlines the probability of getting a breeding pair. I recall it saying that with 2 angels, you've got a 50% chance, and it jumps to around 98.9% with 6 angels. I took the plunge, bought 6 angels, and eventually ended up with 2 breeding pairs ...

You can't really tell for sure what sex your angels are till they spawn, I've had a few and the only way I knew was when they spawned.
