Honestly, I think most foods should help, but I'm not sure about lettuce specifically. I've heard it's not too bad for them, though.

It's highly improbable that the same fish laid eggs twice in such a short span.
Females often spawn together, with one not quite ready but still influenced by the hormonal surge, prompting her to join in. Then, a few days later, she's ready to spawn herself, possibly.

I'm wondering what dechlorinator you're using - some of the older ones might not be effective against chloramine. Chloramine can break down into ammonia, which would get filtered out, and chlorine, which could be causing your readings.

Different water requirements are a major red flag. The likely attacks from the cichlids would be a secondary concern, but still a valid one.

Reducing brightness will help to some extent, but those pictus will likely remain pale on a pale substrate - it's their natural camouflage. They're probably stressed from not being in a group, so to reduce that stress, you could try dimming the lighting and switching to a darker, more natural ...

I'd recommend skipping the blanching step. Most fish prefer their veggies fresh, while others like them soft - it's all about the taste. Just add it to the tank as is and let the fish eat at their own pace. The veg will soften up in the water over time anyway.
